Jason Parkman was the first entrepreneur to bring the fast casual burrito shop to Birmingham. The Lunar Coyote Mexican Grill was the forefather to Chipotle, Moe’s, Q-dobo and other same-style restaurants in the area. Upon selling out of the Coyote, Jason occasionally worked in the industry while searching for a concept that would inspire him and be new to the Birmingham community.

Our menu is not too lengthy but is actually contains more items than can be stored on SPF-1 during a regular route day. Therefore we may only serve 9 to 12 main menu items each day. Freshness is goal and quality is our stride. With this type of mindset expect to see a rotating menu with a cornucopia of fresh taste.
